Knocking out norovirus

Norovirus is the single largest cause of foodborne illness in the US, responsible for roughly 5.5 million infections and 22,000 hospitalisations annually, according to the CDC. The UK’s Food Standards Agency says that outbreaks have been linked to contaminated foods like oysters and fresh produce, such as berries. From production through to service, Monica Karpinski looks at how food safety practices can keep norovirus at bay, with expert insight from Dr Donald W Schaffner of Rutgers University and North Carolina State University’s Lee-Ann Jaykus.
