Roquette has introduced NUTRALYS Pea 850F, a pea protein isolate formulated to deliver a more neutral taste in plant-based foods and beverages.
The French plant ingredient supplier said the new ingredient extends its NUTRALYS range and targets persistent formulation issues associated with the vegetal flavour notes typical of pea protein.
Manufacturers have often depended on flavour-masking systems to offset these characteristics, which can complicate clean-label positioning, the company noted.
According to Roquette, NUTRALYS Pea 850F retains the nutritional attributes of pea protein while reducing characteristic pea flavours.
Sensory panel testing indicated a smoother, more neutral taste profile, enabling higher-protein formulations without the need for added ingredients or processing aids, according to the group.
Products containing the ingredient may be labelled as ‘pea protein’ or ‘pea protein isolate’.
Functionally, the isolate is said to match the performance of Roquette’s NUTRALYS S85F benchmark, with improved sensory properties.
It offers high emulsion capacity for formulation stability, along with moderate gelling and viscosity, and solubility suited to ready-to-mix and ready-to-drink formats.
Roquette Global Protein product marketing head Benjamin Voiry said: “Pea protein provides excellent nutrition and functionality in plant-based and high protein foods and beverages, but sensory performance has remained a critical barrier to wider adoption.
“With NUTRALYS Pea 850F, we have tackled the problem at ingredient level, rather than just masking it.”
Roquette identified dairy alternatives, beverages and specialised nutrition – including high-protein products developed for GLP-1 users – as key application areas.
The company added that NUTRALYS Pea 850F is not classified as a major allergen.
It forms part of the wider NUTRALYS portfolio of pea, wheat and fava bean proteins used in plant-based, hybrid and high-protein food and beverage products.
The launch forms part of Roquette’s ongoing expansion of plant-based protein solutions focused on functionality and nutrition.
In November last year, the company also introduced AMYSTA L 123, a thermally soluble pea starch produced through a patented process without enzymes or chemicals, marking the first entry in its AMYSTA label-friendly starch line.
