Merck and mantro have launched EdiMembre, a deep tech spin-out based in Massachusetts, US, to advance the alternative protein industry.

The new entity will commercialise Merck’s edible membrane technology, addressing sustainability and food security.

Led by former Merck employees, the company benefits from Merck’s intellectual property, with mantro facilitating its commercial success.

EdiMembre builds on Merck’s Deep Tech foundation, expanding the use of edible membrane technology developed over recent years.

The platform is crucial for creating complex tissue structures for scalable cultured meat production and exploring high-protein, plant-based pasta applications.

Supported by a strong patent portfolio and strategic partnerships, EdiMembre aims to accelerate sustainable alternative protein solutions.

Merck group science and technology officer Laura Matz said: “Cultivated meat, a core focus in the alternative protein market, offers a powerful solution for sustainability and global food security.

“To meet urgent market needs, the development of structured meat products that replicate the texture and complexity of conventional meat is essential.

“Merck enabled the creation of a dedicated spin-out to develop a market-ready product, unlocking access to this breakthrough and empowering clients and investors to shape the future of food together.”

EdiMembre will be led by CEO Timothy Ryan Olsen and CTO Ryan Sylvia, who previously led Merck’s Cultured Meat and Scaffold Technology programs.

It operates as a food technology company, developing manufacturing capabilities for future food production.

Leveraging Merck’s technology, EdiMembre has produced early versions of high-protein plant-based pasta and devices with edible hollow fibres for structured cultivated meat.

Mantro CEO and EdiMembre new non-executive board member Manfred Tropper said: “The formation of EdiMembre represents a significant milestone in the alternative protein industry.
