
International Flavors & Fragrances (IFF), a US-based provider of flavours and food ingredients, has introduced POWERFRESH ACE 2000 in the US market.
POWERFRESH ACE 2000 is a fresh-keeping enzyme solution crafted to enhance the softness, resilience, and cohesiveness of bread.
The solution addresses consumer demands for extended freshness while enhancing operational efficiency for industrial bakeries.
As part of IFF’s POWERFRESH portfolio, the new enzyme solution offers a strategic approach to consistent bread quality and efficiency.
It allows bakeries to extend distribution and effectively manage shelf-life targets.
POWERFRESH ACE 2000 offers improved product resilience and operational gains when used in new formulations or to optimise existing ones.

According to a survey, 60% of consumers are inclined to purchase bread labelled as ‘fresher for longer’, with over half expecting a minimum of four days of freshness.
POWERFRESH ACE 2000 aims to meet the market expectations by improving softness and resilience of the bread for up to 34 days.
In trials led by IFF, POWERFRESH ACE 2000 showed positive results in both white and whole-wheat bread applications.
The enzyme delivered superior resilience and maintained structure and visual appeal, even at lower dosages than competitors.
Also, the solution is said to support sustainability goals by reducing waste, minimising returns, and optimising supply chain resources.
