Meadow Cheese's focus on the pizza sector, processed cheese and desserts means that the company has become the centre of excellence for heat-processed dairy manufacturing within the Irish Dairy Board. The company's ingredient portfolio includes: pizza cheese, processed cheese, sauces, desserts, premium chocolate soft cheese and medium-fat soft cheese.
This is cheese developed specifically for pizza manufacture to enable optimum melt, stretch and browning. The range also includes extruded cheese ropes for use within stuffed-crust pizza that have controlled melt characteristics so that the cheese is contained within the dough during the cooking process. Meadow Cheese also offers individually quick frozen (IQF) cheese in shredded and grated format. IQF cheese greatly increases shelf life compared with chilled products, and is much easier to distribute evenly than fresh shreds for greater precision, portion control and product uniformity.
This range includes low-melt-technology cheese for use within applications such as kievs, pies and slices, as well as cheese spreads and pastes. In addition, custom analogues are developed to match particular cheese types, colours and flavours as an alternative to natural cheese, and a number of these products have been certified by the Halal Food Authority (HFA). Analogues can be used in conjunction with various cheeses to help stabilise and reduce costs.
Working with customers to create bespoke solutions, a wide range of sauces with authentic flavour profiles has been developed with specific functional properties such as controlled viscosity and melt characteristics. Applications include béchamel sauce for ready meals, cheese and white sauces, dipping sauces and nacho cheese, pasta sauces and fillings.
A wide range of chilled desserts includes cheesecake batter mixes, soft cheese and luxury Belgian chocolate soft cheese, custard, mousses, cream stabiliser and dessert sauces. Meadow Cheese has also extended into non-dairy-based dessert products to complement its range and include versatile flavoured jellies that offer high quality and consistency.
A cost-saving alternative to cheddar cheese, Meadow's new medium-fat soft cheese looks and performs like cheddar during food production, making it ideal for ready meals, sandwiches, pizza, fillings and toppings. In light of fluctuating dairy prices, the use of medium-fat soft cheese means that manufacturers are able to better manage the pricing on their finished products. Available in white and coloured varieties, this product can be supplied in various formats including block, grated, shredded and diced.
