Enzymes are naturally present in all raw materials, some are beneficial, like amylases in grain, some are less beneficial, like stabiliser-degrading enzymes, which shortens the shelf-life of products. Either way, the more you know about the enzymatic composition of your raw material, the easier your processing will be. In the baking industry, the dough quality is dependent on amylase activity. Existing methods, the falling number method for example, is over 70 years old and provides you with an empirical result. In the juice industry, carboxymethylcellulose (CMC) degrading enzymes are causing trouble as they break down the stabilizer added to the final product, decrease shelf-life and alter product appearance. By monitoring CMC degrading enzymes, you can ensure high quality of your product.

We know you already screen for enzymes in your raw material, but with GlycoSpot's technology you can do it faster and cheaper. Our enzyme screening technology is available to you in the form of ready out-of-the-box kits, and therefore you have limited hands-on-time for the preparation prior to the screening process. Depending on your samples you can use a single test tube, a petri dish or a 96-microtiter plate for your analysis. Simply add 100-200µL of your material to our ready to use kit, incubate and you have a conclusive result within 30 minutes. This allows you to focus on what is important for you.
